Back to the grind…

Welcome everyone to Monday!  Yah!  Not! Today was the usual Monday.  Everyone has been in the office lately, and it’s hard to get use to because it’s a little busier then normal.  Usually everyone is on the road, but since the holidays are just over everyone needs to set up for appointments.

I kept my promise!! BUT Of course, I woke up REALLY late.  Then, you know it was cold outside so I had to wait till my car warmed up.  Once I found my car scraper the ice melted a little faster.  So by the time all that was done it was coming close to 7am (I have to be at work at 8:30 with a 30 commute).  I got to the gym and decided that I only have 15 min to get any work-out in.  So 15 min on the treadmill it was!  It was the fastest, hardest workout for the short amount of time.  At least I got something in right? Then I came home and made at the same time BREAKFAST/LUNCH.  I decided that sandwiches were the easiest, fastest meals to make.  I made a pb+j sammie for breakfast with a banana and a hummus, spinach, and cheese sammie for lunch with a tangelo and string cheese :).  I then rushed a shower and headed to work.  I was a little late, but whatever!  My office is relax so being a little late is ok.

Right at 5:30pm, I rushed home to let Chip out and made dinner.  I decided since today was so carb loaded that a salad was just right.  I baked chicken with salt, pepper, paprika, and olive oil with a little smart butter in between cracks in the oven at 350 for 30 minutes.  It was on top of spinach, some peppers, and tomatoes.  I put lemon juice and balsamic vinegar as a dressing.  It was delish!! I almost forgot I added goat cheese on top.  All they had left at the store was goat cheese with garlic and chives so whatever again!  I always feel like a meal isn’t complete without a carb so I added a my last Naan out of the box and made a little dip of Balsamic and olive oil.  Yum!!!  This salad was absolutely huge but I ate most of it because I was hungry!  I need to watch my portion control.  Maybe I need to add a little more to my meals during the day so I can feel like I can have a smaller dinner?  I was going to do yoga but it’s getting late and laundry was calling my name.   NOT TO MENTION JON and KATE + EIGHT!  Love that show!!


Ok, for tomorrow… I’m going to wake up at 6 and head to the gym (at least try really hard)!  I want to make sure that I have enough time to make oatmeal!!!!  —On the stovetop instead of the microwave at work.  Such a huge difference….

Odd Combos

Today was the continuation of yesterday…  Yes it’s rough day numero uno.  Blah!  I woke up early, stayed in bed and watched a little t.v.  I started getting hungry so I finally got up and made myself a bowl of cereal with milk.  There was no fruit in the house to put in my cereal as usual so I think I was craving for more.  Then it began… the munchies.  Organic chips, nuts, and a mini pear (past it’s time) made it into my mouth.  Upset with myself I got up and finished my organization project I started yesterday.  It still needs a little more work, but I just made everything tidy.  I was over it!!  It was starting to get late and I needed something to eat.  Sooo… I came up with this for lunch.


This happens to be an apple sausage, 2 poached eggs on a Pan De Sal with Smart Balance.  I needed something veggie-like so I included leftover brussel sprouts from yesterday.  This meal may seem like a weird combo, but it worked for me :).  I showered and put my gym clothes on so I can go to Body Flow class and Yoga after grocery shopping.  But in true Jo-style I began to run out of time.  So I decided to Ex Body Flow class, go to Publix for some grocery shopping and go to Yoga at 4.  I’m proud of myself for thinking of a menu for the week and putting together a grocery list of things I needed.  Well, I got there and found out I forgot about things like string cheese for lunch, soy milk for my coffee, and OJ for juice.  Oh well… blah… at least I got what I needed and nothing more.  I came back home and dropped off groceries, played with Chip for awhile and went back out for Yoga.  I’m sad, because our instructor said they might be working Yoga out of our gym and moving more Body Flow classes.  Body Flow classes are a combo of Tai Chi, Pilates, and Yoga.  Blah!! I am really loving yoga so I hope they don’t work those classes out of the schedule :(.  I was going to do some cardio when I decided I just wanted to come home and rest.  After coming home I snacked again *urgh then made dinner.


Again this may seem like a weird combo:  Sweet potato baked, but then it wasn’t as soft as I liked so I put it in the microwave for 2 more minutes, Salmon with salt, pepper, paprika, garlic, and onion on top baked, and a little tomato for something veggie-like.  Yes, I know technically it’s a fruit.  Weird but yummy dinner.

So tomorrow I promise to get up early before work and head to the gym.  I believe that the mornings are the best time for me to work-out with my stupid work schedule and the commute.  So let’s see….

I know I don’t follow this, but I’m going to start trying to do this starting tomorrow.  Again let’s see how it works out! 🙂



Ok, today started off rough.  After everything was said and done this morning I had breakfast, which was a Filipino roll called Pan De Sal.  I put a little smart butter and a slice of American cheese on top.  The cheese is torn in places, because I gave some to Chip :).  He loves cheese!


Then I decided that since I had a rough morning I deserved a treat.  So Hot Chocolate comes into the picture.  I had this.  It was an single pack that came in my Christmas Starbucks basket.


I opened the bag and to my surprise it was little squares of dark chocolate with little peppermint candies in it.  You melt the chocolate in the microwave and then add milk.  It was absolutely amazing.  It’s everything you imagined and more.  Too bad I couldn’t finish it.  I feel like it was wasted on me.


I started to do a rearrange on our bedroom closet and the guest room closet.  It’s a MESS to say the least.  We always just stuff everything in the guest closet when we just don’t know what to do with it.  I started to get hungry so I decided to eat the rest of the soup I made last night.


I really just threw everything together, but it came out pretty good!  Here’s somewhat of a recipe.

  • 1 can Beef Broth
  • 1/4 lb of shrimp
  • 1/4 of an Onion
  • 2 cloves garlic
  • pepper and salt
  • chili garlic sauce
  • fish sauce
  • broccoli and cauliflower mix
  • Pho noodles

First I sauteed the onions and garlic together with olive oil.  Then I threw in half of the broccoli and cauliflower mix I had left.  Once the veggies were tender I added the shrimp.  You could really stop here and add salt and pepper, but I then added a can of beef broth.  I added about 2 cups of water because I like lots of liquid in my soup.  I added the chili garlic sauce in the broth with some fish sauce. Once everything comes to a boil I add the Pho noodles.  Don’t forget that you need to at least have the noodles soaking for about 10 min.  30 min is the best, but I cooked the noodles the rest of the way in the boiling soup.  It’s a easy dish that I threw together with stuff I had on hand.

I really need to go grocery shopping tomorrow.  After the soup I ran to the stores down the street.  First I went into Pier 1, World Market, Bed, Bath & Beyond, and finally to Target.  They were all next to each other and I wanted to see the sales.  I came home with some success in finding organizational tools for our apartment.  I feel so accomplished.  I came home and dropped everything off. Before I headed to the gym I ate a mini Luna Bar.  I ended up walking 1 hr on the treadmill with my Women’s Health magazine.  I think I will subscribe to it, because one copy is $4.99 at Target!

After the gym I was starving.  I debated going to pick something up, but then I decided since I spent so much money today I should try to make something.  I ended up with this.


This is Naan and Chicken Tikka Masala from Ethic Gourmet.  I will defintely be getting this again.  It’s easy and tasty!!  The brussel sprouts are from Bird’s Eye.  This meal wasn’t half bad for a couple minutes in the microwave.  I just ate the other Naan I made for dinner as a snack.

Alrighty, I’m off to bed now.  It’s been a long day….



I bought this at Whole Foods the other day down in Charleston.  I wanted some quick meals that I won’t have to cook for the up coming weeks.  So this was one of the new frozen products I tried out.  More products to come…  I really didn’t know what to expect.  I don’t even think that I read this completely before picking it up.  T was with me and of course he was trying to rush me out because to him 5 seconds to make a decision is too long.  I can’t really think that quick with whining in the background.  Well, I was absolutely delighted!  I, of course, was in a rush this morning and tossed this in my lunch bag with an applesauce.  Then as I was rushing out the door I couldn’t find my keys.  I called Boyfriend to see where he put them and alas I found them.  I was still on the phone and running out the apartment when…. I realized I forgot my lunch bag right near the door.  So I had to run up the stairs and get it.  Whew!  A few more minutes late but well worth it.

My co-worker walked right in after I popped my Pot Pie in the microwave and it does take about 4 to 5 minutes.  She was picking at her leftover pizza and whining that she might just use the toaster oven.  So beware if you decide to bring this for lunch make sure there’s no one coming right after you.  I bought this to my desk and started to crack it open.  That’s my favorite part!!!  Then I took my first bite! YUM!!  Of course I found my first piece of tofu and I was a little scared, but wow you don’t even miss the chicken!!  I love tofu and now I’m convinced it tastes good in everything!  The sauce was creamy and delish.  The veggies were tender and warm.  I have to admit I picked out the carrots.  It’s one of the ONLY things in this world that I don’t like.  I ate the entire pot pie and to make things even better!!! I didn’t need anything else.  It was so satisfying!  My only gripe about this Pot Pie is that it is a little costly.  If you think about the other Pot pies out there it isn’t that expensive, but if I were to go out and get fast food it cost more for food and gas.  I feel good when I’m eating this and the sodium level in this isn’t as bad as other soups or products out there that claim to be healthy.  So Joane would get this again.— Two thumbs up!  The price is worth it.

Back from my Holiday!

For the last two or so weeks T and I have been back and forth from Charleston to Columbia during Christmas and New Years.  We had a blast both times.  It’s nice to spend time with friends since I haven’t made to many friends here in Columbia.  Boo-woo!  Sob feast… On to the Blog!

We spent New Year’s eve with friends.  Boyfriend was in the bathroom while this picture was taken.


Today’s Eats

The day started off with Breakfast: Oatmeal pancake made with an egg instead of egg whites.  I topped the pancake with crunchy peanut butter, crumbled banana, and maple syrup.  On the side I had cantaloupe.  I ate about half of everything on this plate.


T and I did some errands today.  First, we put away the Christmas Tree and all the decorations.  So sad!  Is it me or is everyone’s living room bare now.  Sigh…  After going to Target and the Commissary for a few pantry items we came home.  I was running out of time before yoga so on the way home we stopped at Jersey Mike’s.  I got a veggie sub with a few chips.  With your imagination picture a sandwich with too much vinegar!  Yuck but I was hungry.

Then I was off to a yoga class at my gym.  It was as usual great!  The music is fun and the we go just go on our on flow.  Our instructor’s name is Jim and he’s not the typical Yoga instructor, but it’s a great work-out.  I always try to go to it to begin my week off at the right foot.  I know I haven’t been working-out and sticking to a diet of any sort, but it will all go back to normal tomorrow :).

Dinner was a frozen Uno pizza and some raw green peppers with a little ranch.


Boyfriend rented Step Brothers which I’ve been watching while doing this blog.  So on to the movie… Niters!
